Home-Made Tabouleh
Parsley (flat leaf) - 3 bunches
Mint - 1 bunch
Tiny tomatoes (any kind) - little basket
Persian cucumber - maybe 2
Lemon - 1 or 2
Olive Oil
Quinoa
Pine nuts
Hemp seeds
Eat cold or warm.
YUM! YUM! YUM!
You can tweak this recipe to your liking. You can add more of any ingredient. You can take out stuff you don't like.
FYI - If you plan on taking this to a party in a few days or are eating it over the span of a few days, DO NOT MIX THE INGREDIENTS TOGETHER! It will only stay fresh if you keep the ingredients separate. The parsley and mint mix should be in one container. The other solid ingredients should be in another container. The oil and lemon should be added right before you eat it or before you leave for the party.
Mint - 1 bunch

- Chop up the parsley and mint
- Put in food processor
- Scoop mush into a mixing bowl
- Cut up the cucumbers and tomatoes
- Add to bowl
- Add some pine nuts (optional)
- Add some hemp seeds (optional)
- Mix
- Add cooked quinoa - about the same amount as the mix that is in the bowl
- Pour in some olive oil to taste
- Squeeze the lemon, pour juice into bowl to taste
Eat cold or warm.
